Spicy Chicken Drumsticks

These originally were going to be Make it Paleo’s Buffalo Wings, but then the following happened…

1) Drumsticks are a lot cheaper than wings

2) I did not look closely at the recipe ingredients and figured, “Oh well buffalo sauce is red it must be tomato based”

Tomatoes are absolutely no part of this recipe....

3) I found this recipe and decided I could fan dangle some close relative to buffalo sauce with the tomato sauce and serranos I purchased.

The finished product ended up being quite tasty, but not quite of the Buffalo wing genre thus I give you…

Spicy Chicken Drumsticks

20 drumsticks

160z tomato sauce

1 serrano chile seeded and diced

1 yellow onion diced

5 garlic cloves minced

1/2 cup apple cider vinegar

1 tsp hot sauce of your choosing

1 Tbsp chipotle chile powder

1/2 tsp onion powder

1/2 tsp garlic powder

salt

pepper

The Method

1) In the bottom of a saucepan saute onions, serranos, and garlic until translucent

2) Add tomato sauce and spices. Simmer for 15 minutes

3) Add apple cider vinegar and reduce down for 20 minutes

4) Puree tomato mixture and add spices as needed

5) In a large plastic bag allow drumsticks to marinate in sauce for a minimum of 1 hour

Soaking up the flavors

6) Preheat oven to 375F

7) Lay out drumsticks in an even layer

Drumsticks all in a row!

8 ) Bake for 45 minutes or until done
