Smokey Tomato Soup

This is an easy and tasty soup to make on any day and it definitely packs a punch! Great for cold days : )

 

Smokey Tomato Soup

2 lbs tomatoes (Roma, beefsteak, whatever you fancy) chopped

4-6 celery stalks chopped

1 onion chopped

5-6 cloves of garlic minced

2 cups chicken stock

1 1/2 Tbsp smoked paprika

2 Tsp cumin

1/2 – 1 Tsp chile powder

1/2 Tsp dried oregano

salt

pepper

1 Tbsp fat of choice

Avocado (optional)

Spring Mix (optional)

 

The Method

All lined up in a row!

1) Melt your fat in the bottom of a large pot and saute the onions and celery until translucent

2) Stir in garlic for 30 seconds

3) Add tomatoes and allow mixture to cook down for 20 minutes

4) Add cumin, paprika, and chile powder

5) Add stock

6) Cover and simmer for 10-15 minutes

Almost done!

7) Puree in a blender or with a hand blender

Always adjust seasonings before you serve

8 ) Add salt and pepper to taste

9) Top with avocado and spring mix. Enjoy!
