Roasted Garlic Cauliflower Puree with Caramelized Onions

A tasty alternative for mashed potatoes : ) Feel free to omit the roasted garlic or onions, it’s equally as tasty that way too.

Roasted Garlic Cauliflower Puree with Caramelized Onions

2 heads of cauliflower

1 head of garlic

1 onion sliced

4 oz cream cheese

1 Tbsp butter

salt to taste

pepper to taste

The Method

1) Preheat oven to 425F

2) Cut head of garlic in half horizontally, lightly coat in olive oil, and roast for 20-30min

3) Clean and cut the cauliflower into florets

4) Steam cauliflower until it almost falls apart

5) Caramelize the onions

6) Puree the steamed cauliflower with the onions and roasted garlic until smooth

7) Add cream cheese, butter, salt, and pepper

8) Eat or save it for later
