Now that I’ve gotten that out of my system let me share a little recipe with you . So as usual this little recipe came together because of an abundance of a particular produce in the ever magical Bargain Bin. Can you guess what it is?
Why yes it’s cucumbers! I knew you people were smart : )
Anyhow I always tend to have some carrots in the fridge and over the weekend I had made Nom Nom Paleo’s Green Chicken for my Paleo Picnic Meetup Group and thus had leftover limes, cilantro, and mint. And if you were wondering the chicken was indeed quite tasty as most of her grub is. I highly suggest you check out her blog because it
1) Has amazing food porn photos
2) She’s Asian like me!
3) Everything she makes is yummmooo and very very nom worthy
5) The list could go on, but I’m not going to bore you with that.
So with all my ingredients and handy dandy julienne peeler I made me some slaw because who doesn’t love a refreshing bowl of slaw that keeps just wonderfully for a few days in the fridge.
3-4 large carrots
1/2 cup cilantro chopped
1/2 cup mint chopped
1/4 cup rice wine vinegar
juice of 1 lime
1 Tbsp sesame oil
2 Tbsp sesame paste*
1 Tbsp coconut aminos or soy sauce
1 tsp fish sauce
* The sesame paste I use is not Tahini, but something you find in Asian markets. If you don’t have this just use more tahini or you can always use almond butter to get that nutty flavor
1) Julienne all the cucumbers and carrots
2) Add cilantro and mint on top
3) Mix the remaining ingredients together in a bowl. Adjust to taste.
* Don’t worry if it tastes a little salty, the water in the cucumber tends to water it down a lot once its mixed in.
4) Dress the cucumbers, carrots, and herbs
5) Mix and enjoy!
Now how hard was that? Go try it. Works great for potlucks.

Sorry for the delay in posts. I wish I had an epic reason other than just being distracted by life outside of work, but alas I do not and I apologize. Pretty much a blog fail. For the most part I’ve just gotten sucked into reading a variety of books, articles, and other information holes on the internet revolving around nutrition, fitness, and getting your “Dream Job” over at Ramit Sethi’s site. One might infer that I’m in that “New Year” mindset ( I know it’s February already you have full permission to judge away) and am trying to really reflect on what I want to accomplish in my life and as a person. Seriously though, if you are feeling like you are in a rut or just want to learn good advice on how to actually tackle anything in life I suggest you go check out Iwillteachyoutoberich.com Ramit Sethi is a no candy coating, no excuses kind of guy and I appreciate it a lot because he also goes into the psychological barriers that hold most of us back.
Anywho, moving on, here is a quick recap of what else I’ve been up to besides fiddling around on the interwebz.
1) Eating a lot of spaghetti squash.
Sorry about the spandex. I played volleyball for 8 years so I find myself inadvertently sporting them more often than I should and thus couldn’t find a sans spandex picture showing the massiveness of this squash.
These beasts were $0.39/lb or even just $0.99 for the whole damn thing if it was in the bargain bin. You can’t even get a box of pasta for that cheap and grains are just bad anyhow, so I urge you to try out this magical yellow vegetable.
2) Working on being able to do a pullup.
And why you might ask? Well ever since I was 40lb of human being in elementary school this is just something I’ve never quite been able to do. Sad indeed, but that is how it is. Baby steps people.
3) Running…wait what?
Yes, I hate running, but as a belated graduation gift Mynchia presented the man and I an all expenses paid trip for the Tough Mudder in Big Bear this July. The course is about 10 miles so I need to rack up my running miles if I’m going to finish this fun adventure and run through an electrical field at the finish line……….
I’m super excited about that part, can’t you tell?
4) Taking pictures of animals.
I love animals and animals love me or so I think.
5) Started a meetup
If you haven’t heard about meetup.com it’s a pretty neat social site where the point is for people to actually come together in the flesh and do fun things such as hikes, movies, network, etc. Go check it out it’s a cool way to acquaint yourself with other cool people in your neighborhood.
And if you’re not busy this Sunday and you live in the Bay Area you should come to my Paleo Picnic Potluck at Lake Temescal : )
6) Made Tacos for the Superbowl ala the Kitchn
So that’s a wrap of the last 4 weeks in a nutshell and I do apologize for my posting delays. I’ll be working on getting back to my regularly scheduled program ASAP!

Liz, Zack, and the Michi Woman Cats
How are you spending the holidays?
After a week we have finally gotten to the end of our leftovers from Thanksgiving. And by leftovers, I only mean turkey, because the man and I demolished our 5 bags of sides within 36 hours. We eat A LOT. Nothing goes to waste in this here household except the occasional bargain bin bag which is already half rotting upon purchase.
Anyways moving on. We have been working our way through the leftover turkey in the form of stock, soups, cauliflower fried “rice”, scrambles, and just plain old dipped in cranberry sauce. Even after a week of that we still had all of this leftover.
We definitely made a dent, but the rest of it had to go and it had to go now! So I looked in the fridge to see what type of things I had that I could use to concoct something edible and use up the rest of the turkey, which also would not take too long because I’m lazy and was hungry. We had some curry at my grandpa’s house the other night and I was still hankering for that taste so I decided to make a Thai Yellow Turkey Curry! (Try and say that five times fast. I certainly cannot. Many accolades to you if you can though)
It ended up appeasing my curry craving, however, it is definitely not an authentic Thai dish by any means. I mostly called it a Thai curry because it had coconut milk, ginger, lime and basil in it. As with most of my concoctions none of them are authentic and usually come about from perusing my fridge and pantry to see what I can make without having to go to the store. I’m generally a go big or go home type of shopper when it comes to the grocery store so I rarely make more than one or two trips a week. This is also probably because I’m a bit lazy so I’ve chosen to perfect my art of substituting with what I have : ) No one has suffered terribly yet…. Let’s hope I can maintain that track record.
And just because it’s always good to take a cat break
I know not many features on Zack have appeared, but that’s because he’s always outside hustlin’ and taking care of his territory. He is far more intelligent then the feline above and much more aware of what’s going on. I was having a tough day Wednesday and Zack, who normally is taking care of his cat business outside stayed in to sleep next to me all night. So to you cat haters out there and nonbelievers cats are loyal to their owners and can sense pain just as much as their doggy friends.
Michi is our younger woman cat. You have met her on my About page, but here are a few more images of this god forsaken feline.
In short, she is a cat. She sleeps a lot, chases nothing, climbs up are window slats, meows, has claws, and likes to keep her business end in your face whenever you are working. We got her to keep Zack company, but really she just sashays around the apartment and sneaks up on Zack to swat him in the face when she feels like it, then acts all cute and snuggly when you least expect it. Essentially she is kind of a female, in ALL senses of the word. (Those of you who are feminists and find this offensive, too bad, I don’t really care)
Anyways moving on to the main event of this post. Michi in all her cat glory also exhibits the oddest behavior. Most cats when they are threatened tend to arch their back, tail puffs up, and get all types of hissy.
But Michi likens this response to extreme pleasure. Particularly in the morning when you are getting ready for the day and she insists on being pet.
